Lima Beans Creole -- Mabel's

Good & inexpensive

  • 2 cups whole dried lima beans (see below for preparation instructions)
  • 4-6 slices bacon
  • 2 onions sliced
  • 1 green pepper chopped
  • 1 cup tomatoes (or more)
Fry bacon -- remove from pan -- add onions & green pepper, cook until tender.  Place layer of lima beans in buttered casserole -- add layer of onion & green pepper, layer of bacon broken in pieces, sprinkle with salt.

Repeat layers -- put tomatoes over all -- back 1/2 hour at 350 (or 325) F.

To prepare dried limas -- soak overnight (or at least 8 hours).  Bring beans to a slow boil in water in which they were soaked, simmer until tender.  This can take from 1/2 hour to 2 hours depending on beans, length of soaking, etc... -- so allow plenty of time.

 I think you can easily use more than 1 cup of tomatoes, especially if they're quite solid -- here again it depends on brand, quality, etc...
